Baked Basque Cod
 

Cod is a simple fish widely available in the Basque region of Spain and is a mainstay in their cooking. Try making a mixture of vegetables available in the fresh produce section for a different variation. This also works well with red snapper.

Ingredients
2 tsp. extra-virgin olive oil
1 green pepper, finely diced
1 white onion, finely chopped
2 tomatoes, peeled and diced
1 garlic clove, finely chopped
2 tsp. fresh basil, stacked, rolled and sliced into ribbons
4 cod fillets, skinned, approximately 4 ounces each
juice of 1/2 lemon
sea salt, pepper to taste
lemon slices for garnish

DIRECTIONS: Heat oven to 374 degrees. Brush four large squares of foil with a little oil.
Mix together the bell pepper, onion, tomatotes, garlic and basil. Put a fillet in the center of each foil piece and top with the mixture.
Drizzle with lemon juice and the remaining oil and season wtih salt and pepper. Fold the foil into parcels and place on a baking sheet in the oven for 20 minutes or until the fish flakes easily.
Unwrap the foil and transfer the fish, vegetables and cooking juices onto serving plates.
Garnish with lemon slices and serve.
